This is my first cupcakes with Butter Cream decoration. Ordered by my co-worker for her daughter birthday celebration at school. Prepared in 2 days, starting from recipe hunting, shopping and voila : baking and decorating for a night starting from 10 PM to 06 AM. Lesson learn for the future is time management, time management and time management.
Comment from my daughter was : delicious Bunda :) and I am little bit nervous waiting the feedback from my costumer.
The cupcakes is Chocolate Fudge Cupcakes, original recipe is courtesy of Dorothy Tong in Cupcake Wars, 2010. I found this recipe in Cakefever and found the same content in Foodnetwork. Originally the recipe is filling the cupcakes with Chocolate Fudge Cookie Bar and using Marshmallow Meringue Frosting. In my case I use butter cream which I thought more simple and cheaper.
CUPCAKES
Ingredients :
- 1 3/4 cups all-purpose flour – I use Segitiga Biru
- 1 3/4 cups sugar – I use Gulaku pouch for finer grain
- 3/4 cups high-fat cocoa powder – I use mix of Bendrop and Valhorna
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1 cup buttermilk, shaken – I use 1 cup of fresh milk, heated and mix with 2 table spoon of lemon juice
- 1/2 cup vegetable oil
- 2 extra-large eggs, room temperature
- 1 1/2 teaspoon vanilla extract
- 1/2 cup freshly brewed strong, hot, coffee – I use instant coffee from Nescafe, 2 table spoon of coffee mix with 1/2 cup hot water
- 1/2 cup hot water
- DIRECTIONS
- Preheat the oven to 350 degrees F. Line cupcake pans with cupcake liners.
- Sift together the flour, sugar, cocoa, baking soda, baking powder, and salt. Set aside. In a large bowl, combine the buttermilk, oil, eggs, and vanilla. Slowly add the wet ingredients to the dry. Slowly stir in the coffee and water.
- Fill the cupcake pans about two-thirds full. Bake until a toothpick inserted into the center of the cakes comes out clean, 9 to 11 minutes. Cool completely, and then frost with Butter Cream
- How about butter cream ? I had looking many Butter Cream recipes yesterday and found this one might be the best one. This is Butter Cream recipe from Mba Ani Kue Ratu. The ingredients are cheap and easy to made. The taste is delicious, just like an ice cream. Enjoy.
BUTTER CREAM - Ani Kue Ratu
Ingedrients :
- 250 gram white margarine Australia
- 250 gram Hollman soft cream
- 250 ml condensed milk
- 200 gram sugar
- 5 table spoon salt water – made from 1/2 cup of hot water mix with 1 table spoon of salt
Directions :
- Heated the sugar with salt water until melt
- Add the condensed milk in the sugar, combine together while still hot
- In large bowl, beat the sugar-milk, white margarine and vanilla with electric mixer at low speed until smooth
- Add the soft cream and continue beat until well blended and smooth
